With the temperatures finally getting cooler, hearty flavorful meals are starting to be served. But just because we are looking for substantial, filling, and tasty meals doesn’t mean we need to slave away all day in the kitchen.

Right now, wives and mothers are busier than ever. Many of us are still working, while being the teacher to our “homeschooled” children on top of all the tasks we normally have. So dinner prep shouldn’t be another daunting task for us. That’s why I am rounding up some of my best “simple meals” and “30 minute meals” to share with all of you who just need one less thing on their to-do list.

This meal looks like it would take a while to make but in reality the longest part of the prep is cooking the pork. And while that happens, you can kick back with your coffee or maybe that “pre-dinner” glass of wine. Shhh. We all do it occasionally. I mean parenting is tough and some days you just need that glass of wine!

This smoky chipotle pork dinner is perfect for a weeknight meal. Let me know what you think of the recipe in the comments. And check out my other recipes for other quick, simple, and delicious meal ideas! I always have families in mind when sharing my recipes.

I hope you love this recipe. If you do, I’d love for you to Pin or Share it so other mommas out there can enjoy too!
