With the temperatures finally getting cooler, hearty flavorful meals are starting to be served. But just because we are looking for substantial, filling, and tasty meals doesn’t mean we need to slave away all day in the kitchen.

Right now, wives and mothers are busier than ever. Many of us are still working, while being the teacher to our “homeschooled” children on top of all the tasks we normally have. So dinner prep shouldn’t be another daunting task for us. That’s why I am rounding up some of my best “simple meals” and “30 minute meals” to share with all of you who just need one less thing on their to-do list.

This meal looks like it would take a while to make but in reality the longest part of the prep is cooking the pork. And while that happens, you can kick back with your coffee or maybe that “pre-dinner” glass of wine. Shhh. We all do it occasionally. I mean parenting is tough and some days you just need that glass of wine!

Chipotle Pork Tenderloins with Carrot Slaw and Garlic Mashed Potatoes

This delicious flavorful dinner is a great option for the whole family.

  • lbs pork tenderloin
  • 2 tbsp McCormick's Chipotle and Garlic Seasoning
  • lbs Yukon Gold potatoes
  • 4 tsp white vinegar
  • 3 tbsp mayonnaise
  • 3 carrots
  • 2 tsp olive oil
  • 3 scallions
  • 2 tbsp butter
  • 1 tbsp sour cream
  • 1 tsp garlic powder


  • Preheat oven to 450°. Prep veggies. Peel carrots and grate on box grater.
  • Combine mayo and vinegar in small bowl, Add carrots and coat. Salt and pepper. Set aside.
  • Thinly slice scallions.
  • Cut potatoes into ½ inch pieces. Place in a medium pot of water and bring to a boil. Cook until tender. (approx. 15-20 minutes)
  • While potatoes cook, rub pork with olive oil and chipotle seasoning. Salt and pepper pork. Place on a foil covered sheet pan. Cook for 18-20 minutes or until pork is cooked through.
  • Once potatoes are cooked, drain and mash with a fork. Add butter, scallions, sour cream, and garlic powder. Combine well. Salt and pepper.
  • Slice pork into medallion slices. Serve with a side of carrot slaw and mashed potatoes. Enjoy!
